“ Dairyland is in 3rd St. Market Hall, one of the dozens such modern “food halls” that keep popping up like mushrooms after a storm in a shower of crony subsidies and tax abatements all across the country. The onion rings are in a cardboard carton delicately balanced on a tray, a square of checkered red-and-white paper beneath them plucked right out of quintessential Americana. The six onion rings are large and hand-breaded, with a consistent crumb, coating, and color. The seasoning incorporated with the breading is readily apparent, with specks of black pepper and paprika incorporated with the breading. They are truly a delight to look at, though being served on a school-lunch style tray in a glorified cafeteria is a slight ding. As expected, the breading is deep and richly flavored, mostly salt and pepper with a little bit of a kick. Breaded onion rings often fail to match the flavor of their battered brethren, but these absolutely hold their ground. There is minimal grease and the onion rings are borderline dry, perhaps another hidden benefit of breaded versus battered. Unfortunately, the taste of the onion doesn’t match up with the breading. They are cut thin, especially compared to the size of the onion rings, and what flavor there is is largely overpowered by the breading and the sauce. The sauce, which the menu dubs a proprietary “Flyover” blend, is thick and rich. There’s a lot of horseradish and it tastes vaguely like the widespread “zesty” sauce. It’s an able complement to the breading, but complete overpowers the onion. Balance is what separates good onion rings from great, that delicate ratio between breading and onion, the way their flavors interplay, the size, the cook time: all of it comes down to balance. The original sin of these onion rings is the thin and small onion, which throws the entire balance out of whack. And when the balance is awry, such as here, the cracks begin to show. The breading has a wonderfully crispy crunch, its rigidity holding up as well as its flavor. And yet that same rigidity is the source of its own destruction, as the thin and loose onion can’t match it and it slips out from the exterior. 6 gets you six large, hand-breaded onion rings, made from scratch and packed with flavor in most respects. The onion portion of the rings is disappointing, but the high-quality and flavorful breading makes these a definite get. ”
“ Ordered the kid’s cheeseburger so I could have a smaller burger and added bacon. Really good and a decent amount of bacon. The cheese curds! We’re so good. With a side of ranch, I believe beer battered. They are expensive but you get plenty, and obviously not the typical frozen curd, they should be more because of that. Lemonade was really good too. Didn’t wait too long, ordered right when they opened at 11 am. ”

The burger was served hot and ready. Very fresh buns and made with love ! Next I tried the homemade custard Ice Cream. The absolute BEST ICE CREAM EVER. The bakery shop right next door is really the cherry on top. The cookies and brownies are so beautiful and each bite just makes you melt. “ Had the kid’s cheeseburger and the onion rings — the toasted bun, flavourful meat, and quality cheese made for an incredibly simple yet delicious burger, possibly one of my favourites (and I’ve tried a good number, believe me). It isn’t a smash burger, but it also isn’t as thick as a normal/steak-style burger (though this might be because I had the kid version, which frankly was great, and perhaps a nice way to justify having two). I don’t know what magic they work with the toasted bun, because it does not go soggy at all even after 10-15 minutes of it sitting there, yet also doesn’t get brittle or dry. The onion rings are also some of my favourites to date, with a dense-style and wonderfully seasoned batter (which I think most places neglect), no unpleasant oil smell, and actual ribbons of onion inside, not onion paste. Service is quick, though I wish they had a buzzer so I could pick up my food hot and fresh. Beats Culver’s for me easily. ”
